Oats and Egg Whites
4-6 egg whites
1 tablespoon flaxseeds
½ cup uncooked oatmeal
Cook oats and flaxseeds in water in a bowl. Pour in egg whites, cook til the egg whites are done. I do this in the microwave. You’ll need to keep an eye on it to ensure it doesn’t spill. Add cinnamon to taste or agave.
Oat and Sultana pancakes
1/2 cup oats uncooked
1/2 cup fat free cottage cheese
4 egg whites (or two large whole eggs)
1/2 tsp baking powder
1 packet Stevia
splash agave
Blend the whole lot together in the blender. Then stir in some organic sultanas. Pour into non-stick pan that’s been sprayed with low fat cooking spray. Keep the heat lower on the pan so they don’t burn.
Super Fast Scrambled Eggs
3-4 x eggs
spinach
small amount of Australian mustard
Combine in a bowl. Use a non-stick pan, spray with low fat cooking spray. Pour the mixture to create scrambled eggs.
Breakfast Frittata
– serves 1 person
2 large free range eggs
1 egg white
¼ cup low fat cottage cheese
1.5 cups of raw spinach
½ cup chopped red onion
ground black pepper.
Cook in a non-stick pan (using low fat cooking spray) the onion and spinach. In a bowl mix the eggs, egg white, cottage cheese and pepper then pour into the pan with the onion and spinach. Once the egg is cooked and set it’s ready to serve.
Oatmeal Pancakes
– option 2
3/4 cup egg whites
3/4 cup oats
1 scoop vanilla protein powder
1 teaspoon cinnamon
Organic Agave syrup
Combine all of the above in a bowl. Use a non-stick pan, spray with low fat cooking spray. Pour the mixture into the pan using a soup ladle or large serving spoon – makes it easier to control the size of the pancakes. Pour on some organic Agave syrup.
