Quick Tuna Meal
1 tin Tuna in spring water
4 ozs cooked sweet potato (steam or microwave)
served with tomatoes, onion, baby spinach leaves
Prawns, Brown Rice and Salad with Balsamic Vinegar
1/2 cup cooked brown rice,
5ozs pre-cooked prawns (shrimp)
cherry tomatoes
onion chopped
baby spinach leaves
balsamic vinegar
Place the prawns on the brown rice on your plate, add the tomatoes, onion (I use red onion) and baby spinach leaves and pour over small amount of balsamic vinegar
Chicken and Avocado Salad
5 ozs grilled Chicken breast
1 oz avocado
tomatoes – chopped
red onion – chopped
red capsicum – chopped
baby spinach – chopped
cucumber – chopped
balsamic vinegar to taste
Grill your chicken breast using seasonings of your choice. Take all the salad ingredients and mix with avocado. And add a splash of balsamic vinegar.
Apple Macadamia Salad
Cherry tomatoes
red apple – chopped
Almonds or pecans or macadamias or walnuts or brazil nuts
mixed lettuce leaves
cucumber – chopped
red onion – chopped
red capsicum – chopped
ground black pepper to taste
Toss all of the above in a salad bowl. Like most salad and veggies I make a container of this salad and then just add whatever protein source I want to it.
Chicken and Crouton Salad
5 ozs grilled Chicken breast
Cos lettuce
cherry tomatoes
chopped red onion
avocado 1 oz
balsamic vinegar
Gluten free bread
garlic
oil
organic sea salt
Grill chicken breast with a dash of olive oil and thyme.
Chop gluten free bread into cubes placed on baking tray, sprinkled with garlic, small amount of olive oil, pinch organic sea salt and baked at 180 Celsius in oven for 5 or so mins.
Toss cos lettuce, tomatoes, red onion, avocado, balsamic vinegar in bowl. Serve with grilled chicken. Wait until you serve up before adding the croutons to your salad.
Grilled Chicken and Slim Pasta
4-5 ozs Grilled Chicken breast chopped
onion chopped
chili powder to taste
spinach (I used frozen for this one)
garlic
Grill chicken to your liking. Cook onion, garlic, chilli powder in pan. Microwave or steam frozen spinach and put it in the pan. Stir together. Heat slim pasta (see instructions on packet). Then stir spinach mixture and slim pasta together with chopped chicken.
Mexican Salad
– You can replace beans with Chicken or Seafood if you like
1 red onion, chopped finely
1 pack of cherry tomatoes
1/4 cup organic olives – chopped or sliced
1 avocado, chopped
chopped coriander
1 pack of baby spinach
1 cup fresh or canned corn, unsalted
1 large can red organic kidney bean (rinsed and drained)
ground black pepper
Place all of the above ingredients in a bowl and toss. Serve with dressing.
Dressing:
The juice of one lime
Squirt of Agave
1 Tablespoon Olive Oil
2-3 Tablespoons of Apple Cider Vinegar (depending on how much zing you like in it)
Ground black pepper
Party In Your Mouth Salad
Pineapple – chopped
beetroot – chopped
red onion – chopped
tomatoes – chopped
red capsicum – chopped
mixed leaves lettuce
cucumber – chopped
organic raw walnuts
Bung the whole lot in a salad bowl or contain and toss. I often have this with boiled eggs.
