Y’know when you’re hungry and you feel like you need carbs – with a decent serve of protein – but you don’t know what to eat… but need something super quick to whip up? 🙂 LOL
I’m usually pretty good at keeping on top of my food prep ( I was actually going to be doing food prep that evening) but ran short a few meals.
So what was I going to eat now! I was hungry and needed to eat asap!
I looked in the cupboard and fridge and thought “what’s the fastest thing I can cook with what I have?”…
So I threw the following together… and it was sooooooooooooooo yummy I had to share it with you.
Oat and Sultana Protein Pancakes
1 cup low fat cottage cheese
1 cup oatmeal (uncooked)
1 scoop vanilla pea protein powder
4 whole eggs
1/2 teaspoon baking powder
Small squirt of organic agave
Put oats, cottage cheese, protein powder, eggs, baking powder, agave and splender into the blender. And combine til it forms a batter. Then stir in sultanas.
Spoon mixture into a pan that’s been sprayed with low fat cooking spray. Cook on one side first until the edges look cooked and you see some air bubble forming. Then flip the pancake and cook on the other side.
I took a pic with my phone (which is why the white plate looks blue! 🙂 )… try them and let me know what you think.
